This is a popular hot pot dish consisting of thinly sliced meat and bite-sized vegetables cooked in a steaming hot broth. The name Shabu Shabu comes from the onomatopoeic Japanese for ‘Swish swish’, describing the sound made by stirring the vegetables and meat in the pot with your chopsticks.
Everyone sits around the hot pot at the table and cooks together, enjoying a communal, sociable dining experience. The meats and vegetables come with various dipping sauces, including sesame or Ponzu sauce (soy sauce with citrus juice), and is offered in an all-you-can-eat style along with Japanese appetizers, rice, and Japanese beers and sake.
